Frozen Red Prawn (Carabineros) 急凍西班牙红蝦
Carabineros are a large deep sea prawn, renowned for their jumbo size and striking bright red colour.  They boast a natural lobster-like sweetness and a very robust sea flavour.  While their meat resides in the tail, their head and body are not to be overlooked, and are excellent for making clear and creamed soups and sauces to which it adds flavour and red colour.  Their heads are as delicacy and none of this prawn should go to waste.
